Fruity Rice Cakes

I always try to incorporate fruit into my breakfast as it is the easiest way for me to make a dent in my daily fruit intake. Equally my lust for peanut butter is endless, so these rice cakes covered in both is heaven for yours truly. 

Serves 2 

Ingredients 

  • 6 Rice cakes
  • 2 Bananas 
  • 4 Strawberries 
  • 4 tsp Peanut butter 
  • 2 tsp Honey
  • 1tsp Sesame seeds
  • 1tsp Chopped pistachio

1. Finely chop the banana and strawberries and set aside. 

2. Cover the rice cakes with peanut butter (can be smooth or crunchy depending on your preference), then layer it with the fruit. Sprinkle the honey and add the sesame seeds and pistachios. 

You can use any fruit for this kind of breakfast but I find that bananas and strawberries work really well with the combination of the peanut butter and the other ingredients.
